BBA Challenge: The European Trifecta (and some other stuff)

I’m still here! I just looked at the date on my last post and realized I haven’t posted anything since Sept. 1 and I can’t believe it’s been that long. This month has been a wash due to the fact that I’m moving. Again. Less than a year after I moved back to Orlando. Ugh. But I’m moving to the literal greener pastures of Virginia, which I’m extremely happy about it because it suits me much more than Florida ever did. We weren’t planning to move but my boyfriend found a new job in Charlottesville and we both hate Florida, so it seemed like the best decision for us, despite being incredibly inconvenient. We’re moving up there next week and once I finally get settled in my new apartment — which I chose entirely because of it’s large, well lit kitchen — I’ll be able to start cooking again and posting regularly.

But first I thought I would give an update on the BBA Challenge since I haven’t posted about it in forever. I’m still plodding along with it, though most people …

Crispy Chocolate and Peanut Butter Granola

We’ve already established that I love those crispy, chewy granola bars and I’m always on the look out for snacks like that so when I found this recipe I was almost angry with myself for not coming up with it on my own. Granola…with Rice Krispies in it. It’s so simple and obvious! It’s basically those granola bars without the extra step of making bars. I’ve always liked granola but it turns out this one simple addition was all I needed to fall in love with it.

Of course, it’s not quite as simple as adding some rice cereal to oats. The thing that makes this granola a real treat is the chocolate. The oats and cereal (and pecans if you want, I left them out) are coated in a chocolate-honey mixture and everything is baked until it’s nice and toasty. Then to make it extra good (and healthier) the granola is topped off with some dried cherries or cranberries. Eat this chocolate granola with milk like a cereal (with bonus chocolate milk left over!) or sprinkle it on your yogurt or you can just do what I …

BBA Challenge Catch-up: Brioche, Casatiello and Challah

So I’m still going at a normal pace for the BBA Challenge, but I’m behind on actually posting about it. I keep going back and forth about whether I even want to post about every single bread and that leads to more procrastination. But I think ultimately, I do want written and photographic evidence that I did in fact bake every single bread in this book, in order. I may do these combo posts for bread I have less to say about, but for instance, I have LOTS to say about the Ciabatta I did this week, so that’s going to be it’s own post (hopefully next week).

Lentil Soup (with Bacon!)

Yep, I’m still obsessed with soup and things I can make in my Dutch oven so this recipe called out to me as I was flipping though the cookbook’s pages.

Also calling out to me? Bacon! Put some bacon in anything and I’m there. There’s not a lot of bacon, though, so this is still a relatively healthy soup. And if you took out the bacon it would still be hearty and filling thanks to the lentils and the vegetables.

With the exception of the lentils, which I personally had never eaten or bought before I made this recipe, it doesn’t have any other specialized ingredients. I had everything already sitting in my kitchen and I definitely prefer recipes where I can use ingredients I already have. I hate, hate, hate, buying a special ingredient for a recipe and then having the leftovers go bad or sit in my pantry collecting dust. (And now that I know I like lentils, I’m finding new recipes to make with them so they’re becoming a pantry staple along with kidney beans and black beans.)
