Cranberry Upside Down Muffins

Cranberry Upside Down Muffins

I tend to stay away from making cakes a lot just because I am not so great with the portion control. But I had been thinking about making a cranberry upside down cake for a while so when I saw it in muffin form I knew I had to try this recipe immediately.

Do you like cranberry sauce? If you do, you’ll love these muffins. For the longest time, I absolutely refused to eat cranberry sauce with whole cranberries. I’d only eat the jellied kind that come out of the can…in the shape of a can. I still have that kind at my Thanksgiving, mostly out of tradition, but I make real cranberry sauce, too, and these muffins make me love it even more.

This is a really easy and fast recipe to make and I think the muffins come out so pretty! If you wanted to be a perfectionist, you could cut off the bottoms so they’d sit straight, but it didn’t bother me.

Pumpkin Cranberry Crunch Muffins

Pumpkin Cranberry Crunch Muffins

It’s finally here! Friday is the first day of Fall and I’m ready for it. The weather has even been cooperating with temps in the 60s this past week. I’ve been baking like mad since the beginning of September but these pumpkin muffins were my inaugural Fall treat and they did not disappoint. I got inspired to make them after cleaning out my kitchen and finding that I still had 4 cans of pumpkin puree and 2 bags of frozen cranberries. I like to stock up on things, can’t you tell?

I’d been wanting to make my favorite quick bread recipe ever: my mom’s Applesauce Bread because it always feels like fall to me. But I decided to play around with the recipe and make it into pumpkin muffins. I subbed pumpkin for applesauce, some of the sugar for maple syrup and some of the spices for pumpkin pie spice. The pumpkin version turned out just as good as the original! These muffins have a very moist and cakey crumb and the pumpkin flavor really shines through.

The cranberries add a wonderful tart contrast to the sweet bread. I know …

Black and White Cake Cookies

Black and White Cake Cookies

I’m finally back from my little hiatus. We’re settled into our new apartment in Virginia and I’m ready to start cooking again. I was ready to start last week but after two things I tried to bake burnt to a crisp and set off the smoke alarm, it became apparent that the oven was broken. Luckily, the maintenance guy was able to fix it after he ordered a new part and now my oven stays at the right temperature (which I verified with an new oven thermometer, I’m not taking anymore chances with burning the house down).

But while I work on getting some new recipes under my belt, I wanted to finish posting things that I made this past summer. You may have noticed I have a thing for black and white desserts (see Black and White Chocolate Cheesecake Supreme, Black and White Cupcakes and Cheesecake Brownies), so when I saw Black and White Cake Cookies in my new Cooking Light cookbook, I knew I had to try them.

Oatmeal Cream Pies

Oatmeal Cream Pies

I don’t usually post recipes I’ve found on other food blogs (and actually the original recipe is from Recipe Zaar, you see my Delicious account for recipes I like from other food bloggers), but I just had to post this one because these are so awesome. Have you ever eaten a Little Debbie oatmeal cream pie? These are just like them…in fact, they are better. I used to love these when I was kid, but haven’t allowed myself to eat one in years. While these are by no means good for you, you at least know what all the ingredients are and you don’t have to worry about all the chemicals and whatever else crap is in the store bought version. I made a batch for my boyfriend to bring to his office and they were a giant hit with his coworkers who all agreed they liked them better than the originals.

Chocolate Covered Nutella-Mallow Cookies

Chocolate Covered Nutella-Mallow Cookies

I think I’m starting to look forward our Game Nights more for the baking, than for the actual, you know, playing games. Since 99% of the cooking I do is for me and my boyfriend it’s really fun to have an excuse to make something for other people. It’s also pushing me to challenge myself and try new techniques. These mallow cookies are a prime example. I’ve been wanting to make this recipe for a long time, but it always seemed like too much effort for cookies that only one other person would see. But making them for a group of people seemed much more worth it and even sounded like the process would be really fun. Plus, these cookies are seriously impressive looking. What can I say, I like to show off. Who doesn’t?

So, are these as big a pain in the ass to make as they look? I will honestly say I was surprised because they turned out to be easier than I imagined. That’s not to say that they don’t take some work, but in the end I …

Molten Chocolate Cakes

Molten Chocolate Cakes

I love chocolate cake. It’s one of my biggest cravings, one that pops up over and over again (almost always late at night). But in the last few years, I’ve noticed something disturbing (to me, at least): I don’t seem to be able to eat it anymore. Take last month, for instance:

Brandon was out with some friends so I was home alone. For some reason when I’m home alone I always want to bake so I decided I would finally indulge my chocolate cake craving and make a cake. After looking though my delicious account, I decided to try Smitten Kitchen’s Peanut Butter and Chocolate cake. So I went to all the trouble of making the cake layers and the two different kinds of icing and after a couple hours finally sat down with a delicious looking piece of it to eat. I took two bites, two bites, and I had to set it down. I couldn’t eat anymore. It’s not a bad cake, in fact, it’s a wonderful cake but it was just so rich that it was too …

Mint Chocolate Double Delicious Cookie Bars

Mint Chocolate Double Delicious Cookie Bars

I always have grand plans every Christmas. This year I’m going to send homemade Christmas cards! This year I’m going to make peppermint bark and send it to everyone in pretty tins! This year I’m going to make cookies for Brandon’s whole office! Over the years, I have actually accomplished all of these things—though rarely all in the same year—but sometimes it doesn’t work out. I get too busy with work or I’m just too lazy to make all the effort.

This is definitely one of those years. This month has gone by so fast, and I can’t believe we’re less than a week from Christmas. I have a few (store-bought) cards and (not handmade) gifts to send but who knows when I’ll get to the post office. I still have quite a few people to find gifts for! Besides all that, I also have work deadlines hanging over everything. I hate being this stressed, especially during my favorite time of the year! All I really want to be doing this week is watching Christmas movies and …
