Maple Roasted Chicken with Sweet Potatoes

I was reading someone’s blog the other day and they mentioned sweet potatoes, insinuating that the majority of people don’t like them. Is this true? Because if it is, then I am making it my mission to spread the word about sweet potatoes. I love them so much I could eat them every single night. I guess when people think of sweet potatoes they mostly think of sweet potato casserole at Thanksgiving, and while I love me some yams, there is sooo much more you do with sweet potatoes.

This recipe is a new staple in my house as it combines my two favorite things into one dish and it is oh so yummy. I also love that this is a very simple, one-pot dish. I guess you could serve with it some rice or a vegetable, but chicken and sweet potatoes are always enough food to fill me up.

Now, I do understand if the idea of maple syrup on chicken makes your stomach crawl, but I assure that once the dish is cooked, you just get this wonderfully subtle maple-y flavoring to the …

Butternut Squash-Apple Soup & Gouda Grilled Cheese

It’s nearing the end of the year which means that I only have a few more deliveries from my CSA and I’m starting to get sad when I think about not getting that box every Wednesday. But I’ll definitely be signing up for another year and, thankfully, I only have to wait about two months since they pick back up in March.

I started this blog several years ago to become a better cook and put more effort into developing healthy eating habits, but joining this CSA has really been the final kick in the pants I needed to make that happen. I’ve probably tried more new vegetables in just the last 6 months than in all of the last 10 years. It’s been great and has helped me to finally convert my inner picky eater into someone who will try anything at least once. There’s still quite a few things I don’t like (mushrooms…yuck) but at least I tried them and I’ve even found ways to hide the stuff I don’t like so it doesn’t go to waste (mushrooms always go into my favorite spaghetti …

Holiday Cheesecake Sampler

I hope everyone had a nice weekend! Brandon and I had a pretty laid back Christmas, we stayed in and watched movies and played video games all weekend. It even snowed a little bit on Saturday so we got the proverbial white Christmas. After going all out for Thanksgiving last month, I really wasn’t in the mood to kill myself making a big dinner again so instead we had a small ham and I made my favorite Pineapple Stuff to go with it. But it is Christmas, so I couldn’t resist having fun with dessert.

One of my presents this year was a set of mini springform pans. Cheesecake is most definitely our favorite dessert, and we agree that the recipe I use is the best cheesecake we’ve ever had (two years later I still get regular comments from people who love the recipe) but I only make it on special occasions for two reasons: 1) a 10″ cheesecake is A LOT for two people to eat and 2) we never ever agree on which flavor …

I know oranges are available year round but for some reason the only time I actually want to eat a whole orange is in the early months of year when my two favorite varieties are available: Cara Cara and Blood Oranges. When they show up at my grocery store I start hording them so I’ll be able to eat as many as possible before they disappear again. I haven’t been to the grocery in a few weeks, so when I went on Monday and saw they finally had blood oranges I grabbed a bunch and decided it was a sign that I had to make something delicious out of them. I was so energized by the idea that I found myself in the kitchen at 11pm later that night making these scones. If I had any regrets about staying up too late I forgot them as soon as I took a bite of one the next morning.

As I said last fall, cream scones are the only way to go. All the scones I’ve tried to make without cream were dry and dense and almost inedible. After some searching I think I …

BBA Challenge: Cinnamon Rolls and Raisin Bread

It seems like every week I keep saying “this is my favorite”, but hands down, these two breads are my favorite from this challenge. A couple of reasons for this:

1. Both recipes were extremely easy. No waiting a day for pre-ferments, just mix up the ingredients, knead, shape, proof, bake and boom: you have yummy bread in about 4 hours.

2. They’re just good. Period. The raisin bread tasted just like the raisin bread you buy at the store. The cinnamon rolls were just amazing. I could have eaten about a million of them. In fact, after picking out the photos for this entry (it’s been a few weeks since I actually made them), I got such a craving for them that I had to make another batch.

Spicy Chicken and Summer Vegetable Soup

Well, hello there. It’s been awhile. I hope you all had a nice summer! You might remember (but you probably don’t) that I mentioned in my previous post that work was overwhelming me. Well, it kind of took over this summer and since this blog doesn’t exactly pay the bills (though it helps pay for my Sephora habit) I had to put work first and get all my projects done. As of last week I finished everything and now I can finally get back to a more normal posting schedule.

Work hasn’t been the only overwhelming thing that happened this summer, though. I decided to challenge myself to do something that I never thought I could do. As of today I am 24 days into Whole30. If you’ve never heard of it before, that means that for 24 days I have eaten no grains, no dairy, no legumes, no white potatoes, no unnatural additives or preservatives and no sugar or any sweeteners (like honey or maple syrup) whatsoever.

Balsamic Chicken with Roasted Tomatoes and Garlic-Roasted Potatoes

Brandon and I started on a diet a few weeks ago. And not one those “I’m eating more fruits and vegetables” kind of things, like an actual counting calories, keeping a food log kind of thing (though of course we are eating more fruits and vegetables, too). The first week was really scary because I thought it would be impossible to come up with a week’s worth of low-fat meals. But now in week 2, I’m realizing that I was very, very wrong. With the help of a couple of great cookbooks, I’m finding that it’s really not difficult and it doesn’t even take a lot of extra time. In fact, all the dishes I’ve made in the past few weeks take MUCH less time to make and both Brandon and I agree that they’ve been really good and filling. If someone else made these dishes for me, I wouldn’t even think they were supposed to be light. They’re just good recipes and they happen to be low fat as well.

I always have grand plans every Christmas. This year I’m going to send homemade Christmas cards! This year I’m going to make peppermint bark and send it to everyone in pretty tins! This year I’m going to make cookies for Brandon’s whole office! Over the years, I have actually accomplished all of these things—though rarely all in the same year—but sometimes it doesn’t work out. I get too busy with work or I’m just too lazy to make all the effort.

This is definitely one of those years. This month has gone by so fast, and I can’t believe we’re less than a week from Christmas. I have a few (store-bought) cards and (not handmade) gifts to send but who knows when I’ll get to the post office. I still have quite a few people to find gifts for! Besides all that, I also have work deadlines hanging over everything. I hate being this stressed, especially during my favorite time of the year! All I really want to be doing this week is watching Christmas movies and …
