Next Monday, this blog will be 2 years old and since I didn’t really do anything to celebrate the anniversary last year I decided to go all out this year. Since I’ve posted quite a few recipes over the last two years, I wanted to make the site easier to browse. I cleaned up the Recipe Index and I added a new Ingredients Index if you want to search for recipes with specific ingredients. I also made an effort to simplify things. I loved my previous design, but I wanted something cleaner and simpler this time. I think the home page and sidebar were too busy before so I made an effort to pare everything down to the essentials (well, mostly anyway, minimalism is kind of against my nature, so this is as pared down …

I know what you’re thinking. Seriously. Because I thought it, too. Cantaloupe pie?? That sounds weird and kinda gross. But you’re just going to have to trust me on this one. I would never share something gross and honestly? This recipe…it’s kind of amazing.
But let’s start at the beginning. You see, I got two big cantaloupes in my CSA box a few weeks ago. I knew Brandon and I wouldn’t be able to eat both within a week, especially since one of them was already well past ripe when I got it. So I set out searching for cantaloupe recipes. Something, anything to use these babies up. Unfortunately, unless I wanted some kind of fruit salad, granita or sorbet (I already had watermelon sorbet in my freezer) there just isn’t a whole lot out there. I’ve been learning to cook for several years now and I finally feel like I’m getting a handle on adapting recipes and improvising to suit my needs, but since I never went to culinary school or anything like that some of the science behind making food still alludes me. Baking can be especially tricky since I’ve been trying to use more whole grain flours and they don’t have quite the same properties as white flour. Today’s recipe comes from what I originally thought of as a baking failure, but through some quick thinking I was able to turn it into something pretty awesome.
This started out as a recipe for apple scones because I needed to use up some of the apples I’ve been getting in my CSA box the past few weeks. I like scones but have always had trouble making them on my own. I can’t think of any scones I’ve made that didn’t turn out dry and crispy. Blech. That is until these apple scones. I go back and forth a lot on what my favorite food is, but donuts are definitely in the top five and likely to be in the top spot most days. Despite that, I don’t buy them very much. I’m just not the kind of person who can eat one donut and be satisfied. And ultimately, I don’t mind staying away from donuts because then when I do eat them they taste pretty magical.
But sometimes you just get a craving that won’t go away. I’ve made homemade donuts before but was not in the mood for the hassle of cutting and frying dough and I don’t have one of those donut pans to make cake donuts in. Then I remembered this recipe for donut muffins that I printed out ages ago and decided it was finally time to give it a try. Cut to this week, now the second time I’ve made them in the past month and I think I have a problem. I can’t stop making them! This whole blogging every day thing is hard. I don’t know how some of you do it. It’s hard for me to blog even once a week sometimes (though I’ve been trying to remedy that). Anyway, a work emergency left me unable to post yesterday and I still have lots to do today, so a slight change of plans: I’ll post all the rest of the side dishes today and the turkey tomorrow. Then next week I’ll post my favorite part of Thanksgiving (or any meal, really): Dessert!
So I already posted all my sweet potato side dishes but you can’t just eat sweet potatoes (well, I actually think I could, but I’m weird). All of today’s recipes (as well as the turkey) are courtesy of my mother. I found them all in her battered, food covered, recipe scrapbook where she dutifully taped in handwritten recipe cards or cutouts from magazines.

Well, it’s January and you know what that means. It’s time for my annual “I’m going to completely change my lifestyle this year…I swear…for real this time.” Sigh. Honestly, I wasn’t really going to bother until Lori at RecipeGirl.com started her “Ten in 10” Challenge. What I like about it is that it’s not about weightloss, it’s just about trying to become more healthy in whatever way you define that.
I like food. I like to eat food. I even like to take pictures of the food I eat because I just like it that much. So going on a diet doesn’t appeal to me. Maybe it’s something I can do for a few weeks but eventually I get, you know, hungry. So my goal for the next 10 weeks is not another diet, but just be healthier (more fruits/veg, whole grains, etc.) and more active. I did that this past summer/fall and lost about 15 lbs. Do you ever make roast chicken for dinner? A while ago a fellow food blogger I follow on twitter asked this question to her followers and said she was surprised to learn that many people had never roasted a chicken before. I also found this somewhat surprising but then I remembered that I used to be scared of making a whole chicken, too. After I roasted a chicken the first time, it became one my favorite dinners, but I can still understand why people would be apprehensive.
So for anyone still on the fence, I present to you: Cornish Hens. They’re basically miniature chickens and as such are even easier to handle and only take about 30 minutes to cook. Cornish Hens are a great stepping stone if you’re not quite ready to make the leap to a whole chicken yet. Plus…it’s pre-portioned! Well, summer is almost over and strawberry season has ended, and every time I go to the grocery store they always seem to be having a sale on their strawberries, obviously trying to get rid of them as fast as possible. But looking closely at the strawberries, many are bruised or mushy and just don’t look that great. Definitely not something I’d want to display on a strawberry tart. But I have a hard time passing up such a good deal, so I buy these sad looking strawberries and immediately freeze them when I get home for use in smoothies or granita.
But sometimes this means I’ll look in the freezer and see that I have way too many strawberries. I came upon this recipe a while ago when I was looking for a recipe to use up some of these strawberries. It’s pretty much the easiest recipe in the world. You mix up the wet ingredients, including the strawberries, in a blender and combine that with the dry ingredients and you’re done. It’s takes about 5 minutes to make these.
