Jason’s Deli is one of my favorite places to eat. Brandon and I go there at least once a week just to eat their salad bar. But the real draw of this place are their mini-muffins. They are complimentary and they are DELICIOUS. In fact, they might possibly have crack in them because they are so addictive. I decided a few weeks ago that I just had to figure out how to make them at home. Four batches later, I think I’ve gotten as close as I can. It’s hard to tell since I can’t do a side-by-side taste test, but these are pretty darn close. Brandon said he thought they tasted exactly the same. I think the original muffins are a bit sweeter, but that’s probably because they have high fructose corn syrup or 8 pounds of sugar or something like that, so I’m willing to sacrifice some sweetness if it will reduce the calorie count (according to my google research the original muffins are 220 calories, which is a lot for something you can eat in one bite).

I am officially putting summer on notice. Seriously. Start packing up. Time to go. There’s only a week and half left in August and then it’ll finally be September. Even though fall doesn’t technically start for a full month, I consider September 1st the first unofficial day of fall. It’s like how they start putting out all the Christmas stuff right after Halloween. I am ready for fall and I don’t care what the calendar (or the weather) says. Here’s what you can expect in the coming months: lots of soup and pumpkin and cinnamon and apples. If you were with me right now, you would see I am laughing like an evil villain. Can you tell I love fall?
But anyway. Back to summer. Because it is still summer for a little while and I need to take advantage of all the awesome produce this summer has brought me. I was really craving some chocolate last Friday night. My usual standby is brownies, because they are simple to whip up, but plain old brownies sounded so boring. I went and searched for brownies at one of my favorite recipe sites and as soon as I saw the name of these brownies I was already drooling.
They did not disappoint at all. Simple to make and they turned out so rich and fudgy. I’ve made a ton of brownie recipes and this is definitely one of the best. The recipe has chocolate chips in it, but I don’t think they were even necessary. They made the brownies almost too rich, so I don’t think I’ll be adding them next time.
My boyfriend is usually not a fan of brownies (which I can’t even fathom), but he loves cheesecake, so he liked these. He’s so picky about desserts (which is probably a good thing or I’d make them a lot more often), it’s great finding something he’ll actually eat!

I didn’t mean to take so much time away, but after a pretty crazy month I should finally be able to start posting regularly again. It all started with me getting what I thought was food poisoning but turned out to be the stomach flu. It was bad enough that I went to emergency room for the first time in my life. That was an interesting experience! I’m a lifelong cookie dough and brownie batter eater, but I may be done after having to admit to about 10 different people at the hospital that I gave myself food poisoning from eating brownie batter. And then it turned out to be the stomach flu! So embarrassing. (In hindsight, I’m laughing at myself, but at the time I really was mortified.)
A week or so after that, I found out that my grandmother had passed away and we drove down to the Mississippi Gulf Coast—where I grew up—to attend her funeral. It was obviously a very sad occasion, but my grandmother lived a very long life and died peacefully. I also found out that …

Christmas is my favorite time of year and one of the main reasons for that is all the baking I get to do. Even when I didn’t cook much, I’ve always liked to bake and cookies are just about my favorite thing to make. Plus this time of year is the only time besides my birthday and Thanksgiving that I let myself make/eat whatever I want and I don’t feel guilty about it. Diets are what January is for. (I’ve already signed up for Recipe Girl’s Ten in ’10 challenge!) So expect a bunch of sweet recipes around here for the next few weeks because I’m in the baking mood.
I’m obviously obsessed with black and white desserts, so I knew I had to make these as soon as I saw them. The original recipe isn’t very christmas-y, but that was easily remedied with the addition of some peppermint extract to the chocolate cookie dough AND to the fudge frosting in the middle. Streusal is probably one of my most favorite words to say as well as one of my favorite things to eat. But now I have a new favorite word: Kuchen. Kuchen just means cake in German, but it’s so much more fun to call it kuchen, isn’t it? Whatever you want to call this recipe, it’s really good and very easy to make. It got the Brandon seal of approval and he rarely likes fruit-filled cakes, especially ones with cranberry. He said it tasted way too good to be a light recipe, but it is, so you don’t even have to feel guilty about eating it!
This is basically a coffee cake, but it doesn’t matter if you eat it for breakfast or dessert. I would venture to guess that you’ll want to have it both times! It’s an extremely moist cake, filled with caramelized pears and dried cranberries and then topped with a delicious streusal topping (I added some oats to give it a bit of crunch and make it healthier). It’s been a little over two weeks since I completed Whole30. It wasn’t easy, but I’m so glad that I did it and I’m really happy with the results. So far, I’ve dropped 15 pounds but the biggest difference has been losing 6 inches off my waist and 3 inches off my hips. Hello, smaller pants size! The only other time I’ve ever lost this much weight was when I did Weight Watchers about 5 years ago. That took a lot of dedication and point counting and feeling hungry most of the time. What I really liked about Whole30 was just being able to eat without counting calories or feeling like I was supposed to starve myself to get results.
It’s also been very illuminating to find that even when you can’t have grains, sugar or dairy, there is still A LOT that you can eat. Before this I honestly didn’t think it would be possible to go even a single day without bread or sugar or potatoes or cheese and now I barely give those things a second …

Just like Spaghetti-os and Oatmeal Cream Pies, Pop Tarts are one of those things I loved when I was kid but have tried to stay away from as an adult. But since I had so much fun learning to make those other favorites at home, I figured it was time I finally attempted a Pop Tart. With the other recipes I was trying to make a homemade version that was close to the taste and texture of the originals. This time I wanted to make a healthier Pop Tart. But one that still, you know, tastes good. And while this recipe isn’t especially low fat (by my calculations it’s about the same as the store bought version), after some trial and error I feel like I came up with a satisfying compromise.
A Pop Tart is pretty much just pie crust with some type of filling, so the pastry dough is the most important part. I tried out several different “healthy” pie crust recipes first.
