I know last week I was all about being healthy, but this week…well, sometimes you just need chocolate! This is my go-to recipe for such times. This is my “It’s Saturday night and I need something sweet and chocolatey or I’m gonna lose it” cake. Since time is of the essence in these situations, this recipe is perfect because it’s so easy. It only takes about 15 minutes to whip up and 30 minutes to bake. Plus there’s none of that “let it cool completely” nonsense. It tastes just as good warm from the oven than it does at room temperature the next day.
A little cinnamon and coffee are added to this chocolate pound cake to give it a nice kick. Since it’s so moist and flavorful on it’s own you don’t really need frosting. That said, if you wanted to slather a slice with some Dulce de Leche, Caramel Sauce or Nutella you would not be wrong. I’ve tried this cake with all three and It. Is. Awesome. I go back and forth a lot on what my favorite food is, but donuts are definitely in the top five and likely to be in the top spot most days. Despite that, I don’t buy them very much. I’m just not the kind of person who can eat one donut and be satisfied. And ultimately, I don’t mind staying away from donuts because then when I do eat them they taste pretty magical.
But sometimes you just get a craving that won’t go away. I’ve made homemade donuts before but was not in the mood for the hassle of cutting and frying dough and I don’t have one of those donut pans to make cake donuts in. Then I remembered this recipe for donut muffins that I printed out ages ago and decided it was finally time to give it a try. Cut to this week, now the second time I’ve made them in the past month and I think I have a problem. I can’t stop making them! I was recently given my grandmother’s box of recipes, most of them handwritten, probably many, many years ago and it’s been really fun going through it and seeing what her favorite recipes were. My mother also had a similar recipe box filled with cards and magazine clippings that I look through periodically. Cookbooks are great, but I love taking one of those meticulously written recipe cards out the box and trying to decipher the tiny, perfect cursive handwriting; trying to follow the sometimes very opaque directions; chuckling at old-fashioned ingredients like “oleo.”
Sometimes I think there is too much importance placed on “original” recipes. I love finding a recipe and knowing that it was made the same way for years and years by my grandmother or my mother or hundreds of people’s grandmothers and mothers. I love having a whole boxes of recipes that have been passed down over and over. Maybe my mom got that recipe from her sister. Or maybe my grandmother got that recipe from a friend. Maybe they never even got a chance to make it, but they still …

I don’t know what it is about bananas but I always feel compelled to buy a huge bunch of them despite the fact that most of the time I eat three or four while the rest sit there and rot. But then I wind up standing in front of the bananas again at the grocery store and telling myself that this time I’ll really eat them all. THIS TIME. I’ll eat two a day! I swear! Yeah, right.
But now, I finally have a good excuse for letting those bananas blacken and it’s all thanks to this recipe. I’d been looking for something with oats that was healthy but still, you know, actually tasted good so when I saw a recipe that had oats and used up all my overripe bananas it seemed perfect. But I still wanted it to be healthier so I did some tests. Can I use whole wheat flour? Can I use less butter? Luckily, the answer to both of those was yes. In fact, it turns out you can completely substitute coconut oil for butter and it tastes just as good while giving you lots more health benefits.

I didn’t used to be a fan of soup. I don’t know if that was one of those things that I turned my nose up at when I was a kid or if my mom just wasn’t a soup person and so she never made it. Regardless, the only soup I ate for years and years and years was Campbell’s chicken noodle or tomato. But when I started cooking for myself, I figured out two important things about soup: It’s generally healthy (even the creamier ones still have vegetables) and it’s really easy to make. Throw some stuff in a pot and you just made soup! I realize that making soup probably isn’t a big deal for some people, but for me, who only ate soup from a can for 20 plus years? Making homemade soup is something I feel proud of, the same way I feel about making homemade bread.

In a perfect world, this would be purely a baking blog where I posted one decadent dessert after the other, but since this is not a perfect world I often struggle with my desire to make these decadent desserts and the reality of trying to be a healthier (and lighter) person. It’s especially hard in a two person household where a whole cake can be entirely too much…and entirely too tempting. So I’ve found the key is to make what I want, but try to give as much away as possible. This strategy has been working out well lately and Brandon’s coworkers seem to be quite happy to eat all of our extra sweets. We also regularly attend a Saturday game night and I’ve found that to be the perfect event for trying out new cookie recipes. I get to satisfy my sweet tooth, and by the end of the night all the cookies are gone so I don’t have anything tempting me the next day.

My boyfriend and I have this inside joke about paprikash and goulash. It makes no sense to anyone but us, but suffice it to say, when I saw a recipe for paprikash, I HAD to save it. I finally got around to making it last week and while I may have made it sort of as joke, it’s really good. And easy to make as well.
This recipe is supposed to be made in a dutch oven, but I don’t have one (it’s on my Christmas list!). I just made it in a skillet and then transferred everything to my 13×9 Pyrex to cook in the oven. Because I was making it in a larger dish, I didn’t think there were enough diced tomatoes so I added a second can. But even if I was making it in a smaller dish, I still think I would have doubled it. The picture in the magazine looked like it had WAY more than one can of tomatoes.

I’m still here! I just looked at the date on my last post and realized I haven’t posted anything since Sept. 1 and I can’t believe it’s been that long. This month has been a wash due to the fact that I’m moving. Again. Less than a year after I moved back to Orlando. Ugh. But I’m moving to the literal greener pastures of Virginia, which I’m extremely happy about it because it suits me much more than Florida ever did. We weren’t planning to move but my boyfriend found a new job in Charlottesville and we both hate Florida, so it seemed like the best decision for us, despite being incredibly inconvenient. We’re moving up there next week and once I finally get settled in my new apartment — which I chose entirely because of it’s large, well lit kitchen — I’ll be able to start cooking again and posting regularly.
