It seems like every week I keep saying “this is my favorite”, but hands down, these two breads are my favorite from this challenge. A couple of reasons for this:
1. Both recipes were extremely easy. No waiting a day for pre-ferments, just mix up the ingredients, knead, shape, proof, bake and boom: you have yummy bread in about 4 hours.
2. They’re just good. Period. The raisin bread tasted just like the raisin bread you buy at the store. The cinnamon rolls were just amazing. I could have eaten about a million of them. In fact, after picking out the photos for this entry (it’s been a few weeks since I actually made them), I got such a craving for them that I had to make another batch.

I didn’t used to be a fan of soup. I don’t know if that was one of those things that I turned my nose up at when I was a kid or if my mom just wasn’t a soup person and so she never made it. Regardless, the only soup I ate for years and years and years was Campbell’s chicken noodle or tomato. But when I started cooking for myself, I figured out two important things about soup: It’s generally healthy (even the creamier ones still have vegetables) and it’s really easy to make. Throw some stuff in a pot and you just made soup! I realize that making soup probably isn’t a big deal for some people, but for me, who only ate soup from a can for 20 plus years? Making homemade soup is something I feel proud of, the same way I feel about making homemade bread.

I know what you’re thinking. Seriously. Because I thought it, too. Cantaloupe pie?? That sounds weird and kinda gross. But you’re just going to have to trust me on this one. I would never share something gross and honestly? This recipe…it’s kind of amazing.
But let’s start at the beginning. You see, I got two big cantaloupes in my CSA box a few weeks ago. I knew Brandon and I wouldn’t be able to eat both within a week, especially since one of them was already well past ripe when I got it. So I set out searching for cantaloupe recipes. Something, anything to use these babies up. Unfortunately, unless I wanted some kind of fruit salad, granita or sorbet (I already had watermelon sorbet in my freezer) there just isn’t a whole lot out there. But I kept looking and finally this recipe for cantaloupe pie popped up. I hope you guys like pumpkin and apples because those are pretty much the only two ingredients I’m interested in baking with for at least another month (ok, that’s probably not true…I may have to use chocolate at some point). In fact, I’ve been going back and forth since last week about whether I should post another apple recipe or another pumpkin recipe and finally the idea came to me to put both of them together in one recipe for pumpkin-apple pancakes!
Brandon is on a business trip this week which means I’m not putting effort into making dinner, instead I’ve been eating lots of pancakes. You see, I was looking for the best pumpkin pancakes to share which meant I had to try several different recipes. I know, it was a tough job. 😉 But ultimately the one I like best is this one from Nicole at Pinch My Salt. The recipe is healthy and mostly whole wheat but you still get light and fluffy pancakes.

Well, I tried. I told myself I was going to stay away from desserts for a while. But….TWIX BARS. I really tried, but come on. TWIX BARS!!! Plus, with Halloween coming up I actually had a good excuse to make them. It’s not me, it’s Halloween. Halloween made me do it. Really, it couldn’t be helped. (In my head this is a perfectly logical argument.)
Whatever the excuse, I am so glad I made these because they are fantastic. Brandon, cynical person that he is, would like you to know that they are not exactly like a Twix because the ratio of cookie to caramel to chocolate is off, but BLAH BLAH BLAH (I am sticking out my tongue right now). No they aren’t exactly the same, but they have the same essence. That’s all I ask for in a homemade version of something, I don’t need an exact molecular copy. I’ve been on a strawberry kick lately (seriously, I hope you like strawberries because I have two more strawberry recipes coming up). I also finally bought a tart pan last week and I wanted to make something fun and different. This may not sound like such a “different” dessert, but it’s really different for me. The majority of the desserts I make are either cake or cookies (or some variation like cupcakes and brownies). I’ve only make pie during the holidays and as much as I’d LOVE to make my cheesecake all the time I have to force myself to save that for special occasions.
Anyway, I found this recipe in my favorite cookbook and decided to go for it. I’m glad I did because this was damn good but it’s kind of involved. It’s definitely worth the effort to make, but like pies and cheesecake, I think this is a “special occasions” kind of dessert. So I decided to do something a little crazy. The awesome Nicole at Pinch My Salt started a group to make every single recipe in The Bread Baker’s Apprentice by Peter Reinhart. When she first announced it on Twitter, I was interested but ultimately decided it would be too much work. But then more and more people started joining with her and I kept thinking about it until she announced she was closing the group to new members. As soon as I heard that it made me realize how much I wanted to do this, so I emailed her immediately to join the group.

You know that saying, “An apple a day keeps the doctor away?” Of course you do, everyone does, but I wonder how many people actually eat an apple every day? After eating poorly and—not surprisingly—feeling crappy all summer I’ve been making an effort to get my diet back on track and eating an apple every day was the first thing I decided to do. But not just apples, I’ve been making sure I have at least one fruit or vegetable with every meal. That includes dessert, too, which is where this wonderful Brown Betty comes in.
A Brown Betty is a dessert that’s similar to a crisp but instead of just having the awesome streusel-y part on the top you get several layers of it.
