I realized the other day that the majority of the food I eat is breakfast food. I eat a lot of eggs, muffins, fruit bars, smoothies and cereal, not just at breakfast time but throughout the day. It’s not at all uncommon for me to have a bowl of cereal for dessert. My absolute favorite thing is breakfast for dinner, but I have a boyfriend who is a weirdo who likes, you know, dinner-y things for dinner. So that’s why I started “whatever” nights, which are nights 1 or 2 times a week when we just fend for ourselves. I get my breakfast for dinner and Brandon can order Chinese food or pizza. Everyone is happy.
My recent breakfast related obsession is blueberries. I’ve generally been ambivalent toward blueberries, but after putting them in my fruit bars, I realized how delicious they can be and now want to use them in everything. I’ve been making tons of blueberry pancakes lately, but last night I really wanted waffles. I know it can be done, but blueberry waffles sound messy to me. …

Now that Halloween is over and there’s no more candy to tempt me, it’s time to start eating better. I’ve recently decided to make an effort to eat less processed food. (Do homemade twix bars count?) I pretty much have the healthy dinner thing down, so most of the processed food I eat was coming during the day because it was simpler to grab of bowl of sugary cereal or a handful of overly salty crackers from box rather than take the time to make real food.
But I had certain criteria when looking for things to eat during the day:
- Easy to make (either the day of or ahead of time)
- Eaten at room temperature or easy to reheat
- Easy to snack on (e.g. can be eaten at my computer without being too messy)
Common denominator? EASY. I put a lot of effort into making a good dinner so I don’t want to have to worry about the rest of the day. This recipe, I’m happy to say, fits all three criteria. It only takes 10 minutes to whip up (and in a single bowl at that) and 25 minutes …

Has this ever happened to you: you see someone eating something on TV or in the movies and all of sudden you just have a huge craving for what they’re eating? This summer I’ve been rewatching one of my favorite TV shows, Gilmore Girls — Remember? Lauren Graham? Rory? Stars Hallow? The dear, departed WB? — and this has become a major problem for me. If you don’t remember or never watched the show, let me just tell you: those Girls can eat. A lot. But they live in magical TV land where people can eat 20 pounds of junk food a day and not gain weight or have any kind of serious health problems. Sigh. I want to live in that world! Sadly, I don’t so there’s been a lot of watching Lauren Graham and Alexis Bledel eating delicious things as my stomach growls grumpily.

Brandon and I started on a diet a few weeks ago. And not one those “I’m eating more fruits and vegetables” kind of things, like an actual counting calories, keeping a food log kind of thing (though of course we are eating more fruits and vegetables, too). The first week was really scary because I thought it would be impossible to come up with a week’s worth of low-fat meals. But now in week 2, I’m realizing that I was very, very wrong. With the help of a couple of great cookbooks, I’m finding that it’s really not difficult and it doesn’t even take a lot of extra time. In fact, all the dishes I’ve made in the past few weeks take MUCH less time to make and both Brandon and I agree that they’ve been really good and filling. If someone else made these dishes for me, I wouldn’t even think they were supposed to be light. They’re just good recipes and they happen to be low fat as well.

In my last post, I talked about how I love decadent desserts, but that I’m also making an effort to be a healthier person. Well, sometimes I forget that you can be a healthier person and still bake lots of great treats. Case in point: this coffee cake and also the entire cookbook that this coffee cake is from, Good to the Grain by Kim Boyce. Up until now I’ve just thought of my whole wheat flour as a substitute: “I’ll add some whole wheat flour to these muffins to make them better for me.” But this cookbook has made me look at whole grain flours in a whole new light. Whole grain flours have something that white flour doesn’t have: taste. And because of that you can use them in your baked goods to make that something has tons more flavor and depth than anything made with plain white flour.

Unfortunately, all of those recipes either heat up the kitchen too much or they’re just too hot to eat on a muggy summer day so I haven’t made them in what feels like forever. When I was excitedly making up a new weekly meal plan full of these recipes I realized I hadn’t yet shared one of my very favorite comfort foods: Barbecue Chicken!
Back when I lived in Florida, Brandon and I had a favorite barbecue restaurant nearby that we ate at regularly but when we moved to Charlottesville the nearest good barbecue was a 45 minute drive away. It was my boyfriend’s birthday last weekend and I wanted to make him something special despite the fact that he didn’t really want to celebrate his birthday. The problem is that he doesn’t like many traditional desserts, most especially cake. I can’t even conceive of disliking cake, but somehow he does. Thankfully, though, he does love cheesecake (which he vehemently insists is not really a cake, so much does the taint of the word “cake” bother him). But even having found a dessert he actually likes, he’s almost impossible to entirely please because every single cheesecake I’ve made for him in the past, though always praised as “good” comes with the disclaimer of “but not as good as the New York cheesecake I had that one time”. AAARRRRRRGGGGGGG! So I have made it my mission of find and make a real New York style cheesecake and this time I think I found it. I actually got a “I really like this” out of him, no disclaimers!

To celebrate Valentine’s Day and my birthday, Brandon and I spent a wonderful weekend in a little cottage I rented in the mountains a few hours away. It was such a fun getaway: we did some hiking, we drove around and got lost and we spent a lot of time soaking in the hot tub. When we got back home on Sunday afternoon, I wanted to make myself a birthday cake but after such a relaxing weekend I didn’t want to deal with complicated recipes or put time into making something that didn’t turn out great. That’s why I love the internet and recipe sites with reviews like Epicurious. I mean, if you can find a cake that has 1,400+ mostly raving reviews, that has to be a good cake, right?
I am very glad to have found this recipe because those reviewers were right: I now have my ultimate chocolate cake. I honestly can’t imagine another cake being able to surpass it. It’s made with coffee and oil which result in an extremely moist and soft, but dense cake. I’m pretty picky about my …
