I just had to pop in today and post these cupcakes that I made on a whim last night. They are so good and super easy to make. And I have to tell you, they’ve kind of changed my world view. Or maybe just my…food view?
Anyway, on twitter last night someone posted that pumpkin and chocolate should never go together and until I made these, I totally would have agreed. In fact, this whole month, I’ve been turning my nose up as pumpkin flavored anything. I don’t know when I got it in my head that I don’t like pumpkin, but I think it’s just one of those things that I decided as a kid and I never challenged it. I’ve been overcoming a lot of these prejudices lately, it’s a wonder I ever ate anything with how picky I was!
I had read about the pumpkin shortage that is going on and despite the fact that I don’t ever make anything with pumpkin in it, when I saw a big can of it at the grocery store a few weeks ago I couldn’t help but buy it. I just felt it was something I had to do. What if I find a recipe that calls for it and I can’t find anymore at the grocery store? I’d have been kicking myself for not buying it when I could, right? Well…maybe not, but this is how my mind works.

I don’t know what it is about bananas but I always feel compelled to buy a huge bunch of them despite the fact that most of the time I eat three or four while the rest sit there and rot. But then I wind up standing in front of the bananas again at the grocery store and telling myself that this time I’ll really eat them all. THIS TIME. I’ll eat two a day! I swear! Yeah, right.
But now, I finally have a good excuse for letting those bananas blacken and it’s all thanks to this recipe. I’d been looking for something with oats that was healthy but still, you know, actually tasted good so when I saw a recipe that had oats and used up all my overripe bananas it seemed perfect. But I still wanted it to be healthier so I did some tests. Can I use whole wheat flour? Can I use less butter? Luckily, the answer to both of those was yes. In fact, it turns out you can completely substitute coconut oil for butter and it tastes just as good while giving you lots more health benefits.

I know what you’re thinking. Seriously. Because I thought it, too. Cantaloupe pie?? That sounds weird and kinda gross. But you’re just going to have to trust me on this one. I would never share something gross and honestly? This recipe…it’s kind of amazing.
But let’s start at the beginning. You see, I got two big cantaloupes in my CSA box a few weeks ago. I knew Brandon and I wouldn’t be able to eat both within a week, especially since one of them was already well past ripe when I got it. So I set out searching for cantaloupe recipes. Something, anything to use these babies up. Unfortunately, unless I wanted some kind of fruit salad, granita or sorbet (I already had watermelon sorbet in my freezer) there just isn’t a whole lot out there. I’ve been making an effort to eat breakfast every morning. This is pretty difficult for several reasons: I’m not a morning person and even pouring a bowl of cereal can be too much to handle some days. Also, I’m just not very hungry in the mornings. A cup of coffee is more than enough to fill me up. For these reasons I have to cheat by making myself a “dessert” in the mornings. Basically, something that’s so good, I can’t pass it up. Since they can be made ahead of time, muffins are usually my go-to treat. I’ve made a lot of muffins in my time and they usually fall under delicious but unhealthy or healthy but dry and/or boring. With these peanut butter muffins I feel like I finally found the perfect compromise of healthy but still delicious.
These muffins are packed to gills with nutritious ingredients. They’re made with whole wheat flour and oats and they don’t have any processed sugar (though if you don’t have maple sugar you can use white sugar instead). I’ve always been a really picky eater. I’ve made some progress on that front since I started this blog, but I’m still way too picky to be called a “foodie” or anything like that. But this summer I’ve made some pretty big discoveries that have challenged my preconceptions of certain foods and because of that I’ve decided to change. I made this challenge to myself: I will try everything at least once. If I don’t like it, fine, but at least now I know I don’t like it and I’m not just assuming based on how it looks or smells or whatever weird childhood memories it brings up.
For example, I’ve never liked carrots because in elementary school I threw up in the middle of the cafeteria after eating some. Now it turns out, I still don’t really like the taste of raw carrots. But I use carrots in my cooking all the time now because I’ve discovered that if they are in something else, like a soup or salad or pot pie, then I don’t mind them. I used to obsessively pick …

I made this the other night and even though it’s not from the weight watchers cookbook, it’s definitely low fat (the pork is anyway) and it’s quite flavorful. I have some other WW recipes I need to post, but I’m having some technical issues, mainly that I’m having trouble getting good pictures in my horribly lit new kitchen (as you can see from the pic above, which I wouldn’t normally post, but it’s the best I had)*. I’m thinking about getting one of those table top lighting systems, possibly this one (mostly because it’s under $100, and I’m cheap) . Anyone have experiences with these things like this? Recommendations? It really takes the fun out of it when I make something really good that I want to share and all my pics look like monkeyass (™ Fabio from Top Chef).

Since last fall I’ve tried a ton of soup recipes looking for that one perfect soup. A soup recipe that could stand up against my absolute favorite: Chicken Tortilla Soup. I’ve found quite a few good soups, even some great ones, but nothing that I loved as much as that tortilla soup. But, finally, after months of looking I think I may have found it. I’m not sure I’d say I like it more than tortilla soup, but it’s definitely tied with it now.
I would call this chowder a cousin to that tortilla soup. They are different and yet quite similar. That’s probably why I like it so much. Both have a base of pureed vegetables, but this one doesn’t have tomatoes in the base like the tortilla soup does. This chowder is much creamier and has potatoes, which only makes me love it more. I’ve made this recipe several times and adapted it a bit by adding some corn and a bell pepper to make it even heartier. And don’t be scared off by the chipotle part! This only …

I mentioned last week that I had a lot of egg whites left over after making my king cakes. I wanted to make a cake since I was still in birthday mode, but after a fairly indulgent month eating chocolate cookies and cream cheese filled cakes, an angel food cake seemed like a nice alternative. A sweet treat without any of the guilt!
But I didn’t want a plain angel food cake and I already made a chocolate one a few years ago so I decided to incorporate my current obsession: citrus! I just can’t get enough of oranges and lemons and grapefruits lately and a citrus cake sounded really refreshing. I always feel like grapefruit is kind of underrated compared to other citrus fruits, so I decided to make the grapefruity-est dessert I could come up with. This grapefruit angel food cake is flavored with grapefruit juice and zest and then drizzled with a grapefruit syrup. I also mixed a little grapefruit juice and zest with strawberries to use as a garnish. Obviously, if grapefruit isn’t your thing you can substitute your favorite citrus but despite how much …
