I’m always looking for new recipes for easy and fast dinners to make. But a lot of times fast and easy = boring and no flavor. The other thing I’m always looking for is good pork recipes. I have chicken dishes out the wazoo, but barely any good pork ones. The other night I was pleasantly surprised to find a recipe, which I had torn out of a Real Simple magazine ages ago, that was successful on all counts.
I paired this recipe with my absolute favorite side dish: mashed potatoes. I used to think “real” mashed potatoes were too much work and would make the kind from a box instead, but then I found this recipe and realized how simple they are to make. I probably make mashed potatoes at least once a week these days.

Remember when I said I wanted to try out more things with pumpkin in them. Well, be prepared because I’ve gone a little pumpkin crazy. I had a giant can of pumpkin pie mix that I used for those cupcakes and still had a bunch left over afterward so I went in search for some muffins to use up the rest. But those cupcakes were decidedly not good for you and I wanted to make something that I wouldn’t feel guilty about eating. But it still needs to taste good, you know? Well, this recipe totally satisfies both of those requirements.
Basically, I found a recipe that sounded good and I “healthed” it up. I replaced some of the white flour with wheat flour and I substituted the oil with applesauce. That might make these sound kind of boring, but it’s the streusal that makes them awesome. That’s the only part that I didn’t try to fix. I’m always up for a baking challenge so when Julie over at Willow Bird Baking challenged her readers to make croissants, I didn’t hesitate to sign up. I love croissants, but like donuts, I rarely eat them because of how bad they are for you. But there’s just something about making something from scratch that makes it seem less bad for you. I guess because you have to put actual time and effort into making it instead of just going into a store and buying it. Plus, it’s Brandon’s birthday this week and that is one of the 4 times of the year (along with my birthday, Thanksgiving and Christmas) that I let myself eat whatever I want without feeling guilty about it.
And these croissants? Are absolutely worthy of much guilt, but they’re just way too delicious and way too much work to feel guilty about. I mean, I made these croissants. From scratch. All by myself. That is an accomplishment, not something to feel bad about. These croissants taste better than any that I’ve had from a bakery or store. It could just be because …

So I’m finally back. We moved in to the new apartment about a week and half ago and I got the last few things unpacked and my pictures hung this weekend so I guess we’re officially settled in. After looking through my cookbooks I went on a grocery shopping spree last week and restocked my new kitchen (LOVE my brand new oven and dishwasher) and I’ve been cooking up a storm since then. Because, seriously, for the two weeks while we were moving, ALL we did was eat at restaurants and fast food places. I was sooooo tired of greasy food by the end of it and I think I’ve had my fill for the foreseeable future.
So for the next month (up until my birthday, exactly a month away), my goal is try as many recipes as possible from my Weight Watchers cookbook. I’m not going to be doing the whole point counting thing (though I have in the past and lost a substantial amount of weight) but I definitely want to concentrate on eating better (more vegetables, whole grains, etc.) and trying to be healthier …

You could also call this Creamy Chicken Vegetable Soup. We’ve already established how much I love Jason’s Deli. Well, this is another item they have that I love almost as much as their muffins. When I was searching around for a similar recipe, I wound up finding two. One was made from scratch and kinda high in fat, while the other was uber simple (10 minutes to make it – TOTAL) and low fat. I decided to make both and see how they compared. In end all taste-testers (which would be me and Brandon) agreed that the made from scratch version was better, but the other version was definitely still good and the fact that it was so simple and also low in fat made up for the taste discrepancies.

Sometimes I worry that people think I’m way better at this while cooking/baking thing than I actually am. But if anyone is to blame for this perception, it’s obviously me because I’m always telling you how easy this or that recipe is to make and blah blah blah…look how great it turned out, too! Here’s what you should be taking away from any recipe I post on this site: If I can make this thing, then you most definitely can as well. Because the truth is I’m still learning and I make mistakes ALL the time. But the awesome thing about learning to cook is that the more you do it, the more you learn little tricks and shortcuts so that you can fix your mistakes and learn to steer clear of them next time. But even then, things don’t always go your way. It always sucks to waste ingredients, but you just have to stop, take a breath and start all over again.

This is a fun one! I recently got a new Cooking Light Cookbook so I’ve been trying out lots of different stuff in it. I was looking for something meatless because I decided we should have at least one day a week without meat, as it would be good for our diet as well as our bank account. This just looked like a fun and interesting way to lighten up lasagna and it didn’t disappoint one bit. There was so much good stuff going on, that I didn’t care one bit that there was no meat in it.
The dish is fairly easy to make and doesn’t take too long to prepare. You prepare the three different components separately (the noodles, the cheese filling and the sauce) and then you combine them. I was weary about the sauce since I’m still in the process of accepting peppers into my life after years and years of shunning them for no good reason (ahh, the logic of a picky eater), but in the end …
