Well, it’s that time of year again. The time that I buy bags and bags (and more bags) of cranberries and hoard them in my freezer. I was in Sam’s Club last month and they had the biggest bag of cranberries I’ve ever seen, it had to be at least 5 pounds. Since it was right before Thanksgiving I had absolutely no extra space in my freezer so I didn’t buy the giant bag of cranberries (even though I really wanted to). I figured I would get them later but, of course, the cranberries were nowhere to be found on my recent trips back to the store. Despite that, I still had several bags sitting in my freezer and I decided it was finally time to use them!

It was my boyfriend’s birthday last weekend and I wanted to make him something special despite the fact that he didn’t really want to celebrate his birthday. The problem is that he doesn’t like many traditional desserts, most especially cake. I can’t even conceive of disliking cake, but somehow he does. Thankfully, though, he does love cheesecake (which he vehemently insists is not really a cake, so much does the taint of the word “cake” bother him). But even having found a dessert he actually likes, he’s almost impossible to entirely please because every single cheesecake I’ve made for him in the past, though always praised as “good” comes with the disclaimer of “but not as good as the New York cheesecake I had that one time”. AAARRRRRRGGGGGGG! So I have made it my mission of find and make a real New York style cheesecake and this time I think I found it. I actually got a “I really like this” out of him, no disclaimers!

I go back and forth a lot on what my favorite food is, but donuts are definitely in the top five and likely to be in the top spot most days. Despite that, I don’t buy them very much. I’m just not the kind of person who can eat one donut and be satisfied. And ultimately, I don’t mind staying away from donuts because then when I do eat them they taste pretty magical.
But sometimes you just get a craving that won’t go away. I’ve made homemade donuts before but was not in the mood for the hassle of cutting and frying dough and I don’t have one of those donut pans to make cake donuts in. Then I remembered this recipe for donut muffins that I printed out ages ago and decided it was finally time to give it a try. Cut to this week, now the second time I’ve made them in the past month and I think I have a problem. I can’t stop making them! I can barely believe it’s September already. The summer is basically over and I realized that I haven’t made any ice cream yet! I had all these grand plans that I was going to finally buy an ice cream maker and make all different kinds of flavors of ice cream and frozen yogurt. But no, I never did get that ice cream maker and now it’s looking like I’m going to have to buy a new blender, so I guess the ice cream maker will just have to wait another year.
But I didn’t want the summer to be over without making any ice cream and luckily, it’s still pretty easy to make without the machine. All you need is a freezer and a mixer (or even strong arms and sturdy whisk will do). I decided to make frozen yogurt again because of how much I enjoyed the frozen yogurt I made last summer. It’s better for you than ice cream, but it’s just as creamy and delicious so it doesn’t taste like you’re sacrificing anything.

Life has been really busy lately. Well, no. I should say work has been very busy lately and it’s been bleeding into my life. I love my job but sometimes it can be tough to remember why when I’m still sitting at my computer trying to finish coding a website at 9pm. Despite the long hours, I almost always feel like I’m never getting enough done, which leads to mentally beating myself up about not working hard enough/being good enough, etcetera, etcetera.
A couple of weeks ago I finally realized that is not the way I should be doing things. In fact, I realized that the all negative mental energy I was carrying around was actually making me less productive. So I decided to start over. Instead of being anxious about starting on something (because maybe it’ll be too hard or it won’t be good enough) I’m making an effort to just get started already and just do the best I can. You could also call this Creamy Chicken Vegetable Soup. We’ve already established how much I love Jason’s Deli. Well, this is another item they have that I love almost as much as their muffins. When I was searching around for a similar recipe, I wound up finding two. One was made from scratch and kinda high in fat, while the other was uber simple (10 minutes to make it – TOTAL) and low fat. I decided to make both and see how they compared. In end all taste-testers (which would be me and Brandon) agreed that the made from scratch version was better, but the other version was definitely still good and the fact that it was so simple and also low in fat made up for the taste discrepancies.

When it comes to dinner, Mexican food is my big weakness. I don’t go out to eat too much anymore, especially compared to five plus years ago when Brandon and I dined out more days than we ate at home, but I can’t give up my Mexican food. I go to my favorite Mexican restaurant at least every other week, sometimes more often. Whenever we move to a new town, finding a Mexican restaurant with a decent chimichanga and good queso blanco is my number one priority. And there have been some places (*cough* Jacksonville) where that meant trying out pretty much every Mexican restaurant in town.
I know I shouldn’t eat at the Mexican restaurant so much, though. It’s probably one of unhealthiest meals you can have. So whenever I see a Mexican-ish recipe in one of my many low fat/light cookbooks I always try it in the hopes of finding something satisfying that’s not totally unhealthy. If you couldn’t tell from previous posts I have quite a long list of store-bought-food-I-want-to-learn-to-make-at-home. After I cleared off Spaghetti-Os, Soft Batch cookies were next on the list. They’re probably my second favorite kind of store-bought cookie (because nothing is better than Oreos). I like them so that I can only ever buy the small packs that you get from gas stations because I can’t trust myself around an entire package. If you’re unfamiliar with these cookies, they’re basically what they sound like: extremely soft and chewy chocolate chip cookies. It’s sort of like eating cookie dough but without the threat of getting sick since they’re baked.
I bookmarked this recipe for Soft Batch cookies a while back and finally got around to trying it out earlier this month. That’s when I realized that although I love the texture of those cookies, they don’t really have much flavor other than the chocolate chips.
