My boyfriend skyped me from work on Friday with a link to the article on Whoopie Pies in the New York Times. “You need to learn how to make these”, he said. Not being one to pass up a baking challenge I made them later that night.
Apparently, whoopie pies are the new cupcake, but I don’t know…I’ll stick with cupcakes thanks very much. Not to say they aren’t good because they are, but my issue was with the filling. Personally, I HATE making frosting. It was a miles better experience with my new stand mixer (I completely gave up making frosting with my hand mixer as it was just disaster after disaster with that thing), but it was still a pain and in the end I wasn’t that impressed. I know it’s called Buttercream, but geez, it’s 2 whole sticks of butter! I thought it was butter overload.
Next time I’ll be cutting the amount of salt in the recipe by half as both the cakes and the filling were a bit too salty. Also, I’m going to skip the frosting and fill …

The main reason this recipe caught my eye is because it’s a one pot meal that you can make in your Dutch oven. I’ve been wanting a Dutch oven for years and finally got one for Christmas so anytime I see a recipe that mentions a dutch oven, I’ll almost always give it a try. I couldn’t afford one of those uber expensive Le Creuset’s, so I wound up getting one from Lodge that looks almost exactly the same and is well made, but costs about a quarter less. So far I love it and use it as much as possible: soup, spaghetti sauce, chili, oatmeal, whole chicken. And now I have this new recipe to make in it.

I had a bunch of overripe bananas that I didn’t want to go to waste, so I was going to make some banana bread. That’s what you do with overripe bananas, right? But I couldn’t help thinking how boring that is. I have a great banana bread recipe from my mom, but that’s the point, everyone and their mom already has a great banana bread recipe on hand. So I made it my mission to find something different to make with overripe bananas and boy did I hit gold. This banana coffee cake recipe is AWESOME! I’ll be making this again and again. If I have kids, they will have this recipe from me, just like I have my mom’s banana bread recipe. That’s how good this stuff is.
The one fault issue nit pick, I have with the recipe is that it’s actually too good. Seriously. It’s almost too rich to eat in the morning. That could just be me, though. I’m used to eating very light in the mornings, and the amount …

I have a confession: I don’t really like yogurt. I’ve tried so many times over the years to make myself like it, but it always ends with me having to throw out a bunch of expired yogurt containers. But then I made that Cherry-Rhubarb Fool last month and I realized that yogurt can be good as long as it’s the base for something else. So yogurt by itself = meh, but yogurt + fruit + whipped cream = yum.
Last week I got some absolutely gorgeous peaches and cherries from my CSA and I had big container of yogurt that was close to expiring, so I decided combining them would be a great way to use everything up. But instead of mixing it all together like I did with the fool I made it a yogurt parfait. Because what’s more fun than a parfait? It just feels so much more decadent than a simple bowl of yogurt topped with fruit. Sometimes I have to trick myself into eating things that are better for me and this is a trick that worked really well.

The mousse is very simple mixture of lemon curd (which only takes about 15 minutes to make and can be made up to a week in advance) and whipped cream. So simple! I make a big batch of lemon curd at the beginning of the week, then when dessert time rolls around I whip up a little cream and mix in a few heaping spoonfuls of curd. In 5 minutes you have a smooth-silky-light-fluffy-sweet-tart lemony treat. Bonus: the extra lemon curd is fantastic in yogurt, slathered on cake or muffins or just eaten by the spoonful!
And be sure to try this with Meyer Lemons when they’re in season again next year. I was lucky enough to find Meyer lemons very late in the season and this was one of the first things I made with them.

I’m pretty sure I’ve stated before that I’m not a fan of the warmer months. Spring is pretty, but here in Tennessee it’s mostly just a few weeks of nice weather before it turns into a 90 or 100 degree hell-scape for four months. But there is one thing I like when it gets warm: I can finally drink smoothies again! I know some people drink them all year round, but for some reason I can’t bring myself to make a smoothie when it’s 30 or even 60 degrees outside. It’s the same reason I rarely make soup during the summer. It just doesn’t sound appetizing. But now that it’s warmer, I’m happily back to my smoothie-a-day habit which makes lunch time so much easier.
I am very particular about smoothies. I’ve been making this particular version for a few years now and I had to try a lot of different recipes before I figured out how to make a smoothie with the consistency that I like. I hate smoothies that are thin or liquid-y. …

Since I’ve posted quite a few recipes over the last two years, I wanted to make the site easier to browse. I cleaned up the Recipe Index and I added a new Ingredients Index if you want to search for recipes with specific ingredients. I also made an effort to simplify things. I loved my previous design, but I wanted something cleaner and simpler this time. I think the home page and sidebar were too busy before so I made an effort to pare everything down to the essentials (well, mostly anyway, minimalism is kind of against my nature, so this is as pared down …

I got up yesterday wanting to make a special breakfast for Brandon on Valentine’s Day, but I didn’t have to look to hard find something I wanted to make: my new favorite waffle recipe practically called out to me from the page in my cookbook and I couldn’t resist. In the past waffles were reserved only for special days because despite how yummy they are, they aren’t the most healthy breakfast in the world. Since Brandon and I are both dieting, waffles would normally be out the question. But now that I’ve found this recipe I can make waffles every weekend and we don’t have to feel guilty about eating them!
These waffles are half all-purpose flour and half whole wheat flour, wheat germ and ground flaxseed (which is especially heart healthy). But despite sounding very…well…wheat-y, they don’t taste like it all. They taste like normal waffles, except that the whole wheat adds another dimension to them. These are sweeter, lighter and fluffier than my normal waffle recipe. I usually drown my waffles in syrup, but I’ve found with these I don’t want to. …
