My boyfriend skyped me from work on Friday with a link to the article on Whoopie Pies in the New York Times. “You need to learn how to make these”, he said. Not being one to pass up a baking challenge I made them later that night.
Apparently, whoopie pies are the new cupcake, but I don’t know…I’ll stick with cupcakes thanks very much. Not to say they aren’t good because they are, but my issue was with the filling. Personally, I HATE making frosting. It was a miles better experience with my new stand mixer (I completely gave up making frosting with my hand mixer as it was just disaster after disaster with that thing), but it was still a pain and in the end I wasn’t that impressed. I know it’s called Buttercream, but geez, it’s 2 whole sticks of butter! I thought it was butter overload.
Next time I’ll be cutting the amount of salt in the recipe by half as both the cakes and the filling were a bit too salty. Also, I’m going to skip the frosting and fill …

I’ve never made a big deal about Valentine’s Day. It’s nice to get some flowers but I don’t expect anything else. We don’t even bother going out to eat on Valentine’s Day anymore because the restaurants are always so crowded. Besides, my birthday is less than a week later so it’s easier to celebrate both occasions then. But there is one thing I love about Valentine’s day, especially since I started this blog: it’s a great excuse to make chocolate desserts!
I decided to make some cookies because Brandon’s coworkers have been asking for more cookies from me ever since my epic cookie testing project last December. It’s definitely flattering that they liked my cookies so much, so it seemed like a good idea to keep them happy and to find a great recipe to post for Valentine’s Day at the same time! I found these chocolate malt cookies in one of my Martha Stewart cookbooks and thought they would be really nice paired with a cherry-white chocolate filling.

I have an excuse for not posting in a while: finding a good recipe is hard! This is my third attempt at a cake in as many weeks and I finally have a winner to show you guys. I could have posted a couple weeks ago when I made that spongecake that turned out to be the blandest of bland, but I just couldn’t get myself to be excited about it. (It was so bland, it wasn’t even worth the calories to me and I wound up throwing most of it away. I’ve never thrown a cake away before!) So then I found a chocolate angel food cake recipe that sounded like it would be anything but bland, but I failed. Oh, I failed hard. The cake tasted ok, but I believe the word “brick” was used by my boyfriend when he saw said cake. As in “That’s supposed be an angel food cake? Even though I haven’t lived anywhere that celebrates Mardi Gras for a very long time, I grew up on the Gulf Coast and still have lots of fond memories of going to the parade every year. And since my birthday is in late February, Mardi Gras has fallen on or near the same day—the date changes every year, along with Easter—a bunch of times so I would usually have some kind of Mardi Gras themed party and we’d order a King Cake instead a normal birthday cake. This year, Mardi Gras happens to be next Tuesday, the day after my birthday, so I thought it would be fun to have a King Cake again.
King Cakes I’ve made in the past have always been huge, not only hard to handle and store but they’d wind up drying out before we could finish eating them. So this time, rather than making one giant cake I decided to make small personal-size cakes. I don’t think I’ll ever go back to full size again! I’ve said here many times that Fall is my favorite season. Summer can never be over fast enough for me. Usually, I’m ready to declare it Fall as of September 1st despite what the actual weather or calendar says. But this year is different. It’s weird. I almost feel like I’m cheating on Fall when I say this, but: I’m not ready for Summer to be over.
It’s not so much that this has been a great summer, in fact it’s been a pretty crappy summer filled with record high temps that chased me back into the safety of my air-conditioned apartment. No, the thing I’m regretting is that I missed out on all of the great produce. Looking back through my archives of last summer, I’m reminded of my Peach Dumplings and Blueberry Donut Muffins and Cantaloupe Pie. Because of the move to Nashville and my blogging hiatus I wasn’t able to cook or bake much at all this summer and I’m sad about that.

I’m finally back from my little hiatus. We’re settled into our new apartment in Virginia and I’m ready to start cooking again. I was ready to start last week but after two things I tried to bake burnt to a crisp and set off the smoke alarm, it became apparent that the oven was broken. Luckily, the maintenance guy was able to fix it after he ordered a new part and now my oven stays at the right temperature (which I verified with an new oven thermometer, I’m not taking anymore chances with burning the house down).
But while I work on getting some new recipes under my belt, I wanted to finish posting things that I made this past summer. You may have noticed I have a thing for black and white desserts (see Black and White Chocolate Cheesecake Supreme, Black and White Cupcakes and Cheesecake Brownies), so when I saw Black and White Cake Cookies in my new Cooking Light cookbook, I knew I had to try them.

Diet? What diet? Oh, yeah, actually I made this right before I started the diet and am only getting around to posting it now. I guess it was sort of my last hurrah and it was oh so worthy. I was looking for something to make in my new tart pan and found this recipe on Epicurious.com, but had also come across a recipe for butterscotch sauce that I really wanted to make, so I decided to combine the two into one glorious dessert. Ok, well maybe not glorious, but if you like chocolate, brownies and butterscotch like I do, then it’s pretty damn close. The brownie part is rich and fudgey and the butterscotch sauce is buttery and sweet and silky and I just wanted to lick the whole saucepan clean after I made it. It’s especially great when still warm or rewarmed in the microwave. But even at room temperature the sauce never hardens.
As a whole this recipe is very easy to make. There’s some waiting time while you freeze/cook/cool the components to get them ready, but I think that’s pretty …

I know, know, another chocolate chip cookie recipe. There are a million of them and they’re always THE BEST, right? Well, no, they aren’t because these are hands down the best chocolate chip cookies you will ever bake. Period. These are from the New York Times reporter who went in search of the best ways to make chocolate chip cookies and this recipe is the culmination of that. I made these for my coworkers and they were gone in seconds. Everyone loved them and said they were the best they ever had. One of my coworkers even begged me to make her a batch that she wouldn’t have to share with anyone else.
