Lately, I’ve been feeling like I’m in a food rut, making the same things over and over again, so I’m making an effort to try new things; not just new recipes, but new ingredients that I’ve never eaten or cooked with before. The easiest way I’ve found to do this is to pick one cookbook and only make recipes from that cookbook for the next couple of weeks. That way I can’t just go through and pick and choose the “safe” recipes, I actually have to try things that I would normally flip right past. This led me to choose a recipe with goat cheese in it, something I’ve liked in restaurant dishes, but not something I’ve ever bought and cooked with before. Well, that did it. I guess maybe it never occurred to me that you could buy goat cheese at a normal grocery store? I don’t know, but now that I know you can, it’s all I can do to keep from buying a package of goat cheese every time I go to the store and eating it whole.

Oops. Just realized it’s been a few weeks since I updated. It’s been a rough month as far a cooking goes but things are finally looking up. Me and my boyfriend were really sick for an insanely long amount of time (I kept re-catching the same damn cold). So cooking and/or eating wasn’t a huge priority. Then last week was stupid Tropical Storm Fay, which more or less stopped in my area for about 3 days, so I wasn’t able to get groceries. The one day I did make dinner, the power cut out in the middle of cooking it.
But that doesn’t mean I haven’t been cooking at all. I’ve had a few failed recipes or at least recipes that I didn’t think were blog worthy. I’ve made some VERY yummy things, too, but they were things that cooks much better than I have already posted about on their own blogs. So with that in mind, I will link to these wonderful dishes which you should go and make right this minute. Also, I just wanted to mention my Food and Recipe Links on the sidebar over there. I bookmark lots of yummy recipes from all the foodblogs I read, so I highly recommend taking a look if you are searching for something new to make.

Well, hello there. It’s been awhile. I hope you all had a nice summer! You might remember (but you probably don’t) that I mentioned in my previous post that work was overwhelming me. Well, it kind of took over this summer and since this blog doesn’t exactly pay the bills (though it helps pay for my Sephora habit) I had to put work first and get all my projects done. As of last week I finished everything and now I can finally get back to a more normal posting schedule.
Work hasn’t been the only overwhelming thing that happened this summer, though. I decided to challenge myself to do something that I never thought I could do. As of today I am 24 days into Whole30. If you’ve never heard of it before, that means that for 24 days I have eaten no grains, no dairy, no legumes, no white potatoes, no unnatural additives or preservatives and no sugar or any sweeteners (like honey or maple syrup) whatsoever.

Most of the time I don’t have the forethought to plan recipes related to holidays that aren’t Thanksgiving or Christmas, but I happened to make this for dinner a few days ago and I knew it would be perfect to post on Cinco de Mayo. And in fact, this dish is sort of a celebration for me because it signifies that I’ve finally graduated from the realm of the picky eaters! Chile peppers were my last big food phobia and I’m very happy to say this recipe has put all my fears to rest. And, even crazier, as I was shoveling a stuffed poblano into my mouth my main thought was that I wanted it to be spicier. Five years ago, I wouldn’t even touch bell peppers, so eating a dish with not one, but two kinds of chile peppers in it would have been crazy talk.

Recipe inspiration can come from some funny places. I decided to make these muffins after buying some cute red cupcake liners from Target. I just knew I had to put something with apple in them (and it helped that I had basket full of apples waiting for me at home). I promise I’ll move on to something else besides apples after this, but I had to share this recipe because I was so happy with how these muffins turned out.
It’s a little hard to tell from the pictures what exactly these muffins are since many of the components are a similar color, so let me just describe it for you: it all starts with a graham cracker crust on the bottom (like a little pie!), the muffin is a spiced applesauce cake with a cinnamon cream cheese center and it’s all topped with caramelized apples. Basically, I was torn between making a pie or cake, so I decided to combine them!

If you couldn’t tell from previous posts I have quite a long list of store-bought-food-I-want-to-learn-to-make-at-home. After I cleared off Spaghetti-Os, Soft Batch cookies were next on the list. They’re probably my second favorite kind of store-bought cookie (because nothing is better than Oreos). I like them so that I can only ever buy the small packs that you get from gas stations because I can’t trust myself around an entire package. If you’re unfamiliar with these cookies, they’re basically what they sound like: extremely soft and chewy chocolate chip cookies. It’s sort of like eating cookie dough but without the threat of getting sick since they’re baked.
I bookmarked this recipe for Soft Batch cookies a while back and finally got around to trying it out earlier this month. That’s when I realized that although I love the texture of those cookies, they don’t really have much flavor other than the chocolate chips. Finally! I’ve been looking for this recipe for years and I finally found it. You see, Chicken and Dumplings is my boyfriend’s favorite dish and he’s always wanted me to make it at home. And I have tried, but the problem is there are lots of different recipes for chicken and dumplings and all the recipes I’ve tried haven’t been “right”, according to him.
Here’s what the right kind aren’t: the kind with actual little round dumplings on top. Because I guess that would just be too easy? I’ve tried several recipes like that, one from Martha Stewart, and while Brandon agreed that those recipes weren’t bad, they still weren’t “right”.
The right kind of chicken and dumplings are the kind that Brandon’s grandmother makes. They are the kind you get at Cracker Barrel. They are true southern style, and they don’t actually have dumplings, it’s more like slabs of tender and delicious biscuit dough. You could think of them as really big, thick noodles. I made this the other night and even though it’s not from the weight watchers cookbook, it’s definitely low fat (the pork is anyway) and it’s quite flavorful. I have some other WW recipes I need to post, but I’m having some technical issues, mainly that I’m having trouble getting good pictures in my horribly lit new kitchen (as you can see from the pic above, which I wouldn’t normally post, but it’s the best I had)*. I’m thinking about getting one of those table top lighting systems, possibly this one (mostly because it’s under $100, and I’m cheap) . Anyone have experiences with these things like this? Recommendations? It really takes the fun out of it when I make something really good that I want to share and all my pics look like monkeyass (™ Fabio from Top Chef).
