It’s been a little over two weeks since I completed Whole30. It wasn’t easy, but I’m so glad that I did it and I’m really happy with the results. So far, I’ve dropped 15 pounds but the biggest difference has been losing 6 inches off my waist and 3 inches off my hips. Hello, smaller pants size! The only other time I’ve ever lost this much weight was when I did Weight Watchers about 5 years ago. That took a lot of dedication and point counting and feeling hungry most of the time. What I really liked about Whole30 was just being able to eat without counting calories or feeling like I was supposed to starve myself to get results.
It’s also been very illuminating to find that even when you can’t have grains, sugar or dairy, there is still A LOT that you can eat. Before this I honestly didn’t think it would be possible to go even a single day without bread or sugar or potatoes or cheese and now I barely give those things a second …

I wasn’t able to post last week due to my work load being particularly crazy lately, so this week you get two recipes! I’ve been good about eating better and counting my Weight Watchers points for the past month, but sometimes I just get a craving for chocolate that won’t go away. Especially now since it’s almost Valentine’s Day and there are lots of chocolate recipes floating around trying to tempt me. That’s when I head to my trusty Cooking Light cookbooks because they always have really satisfying desserts that won’t kill my diet. Both recipes I’m sharing today are rich and chocolatey and will satisfy your worst chocolate craving, but they happen to be quite low in fat and calories so you don’t have to feel bad about eating either of them!

I’ve posted a lot of sweet stuff lately, so I decided it was time to switch things up and post something healthier. Since the weather finally started turning cooler this month, I’ve been on the look out for some new soups or stews that I love as much as my chicken tortilla and chicken pot pie soups. Unfortunately, there are a lot of soups out there that are bland and boring, but after trying out two disappointing soups I was happy to find out that the third time was the charm with this recipe.

Okay, so actually this recipe is called Applesauce Loaf, but that name just doesn’t do it justice. It makes it sound vaguely gross, like meatloaf (I’m not saying meatloaf is necessarily gross, but it sure sounds like it is). This recipe is really similar to Banana Bread, so to call it Applesauce Bread makes much more sense to me. In fact, both recipes go really well together. My mother almost always made both at the same time and while I like Banana Bread just fine, it’s the Applesauce Bread that I could never get enough of.
This recipe is perfect for this time of year. It’s sweet and lightly spiced with cinnamon and nutmeg, so it’s a great start to nice fall day. We don’t have fall down here in Florida, which is why I always make applesauce bread and similar recipes this time of year. If it can’t actually look/feel like the season, then I can at least make things that remind me of it.

When I made my last trek to the grocery store, I was wandering aimlessly around the produce section (as you do) and saw they a large carton of blackberries on sale. I love blackberries and this made me think back to when I was kid living on the Mississippi Gulf Coast. My neighborhood was right across from the beach (I say was because it’s not there anymore due to Katrina) and there was house at the front of the street that had been ripped away by one hurricane or another and all that was left was the foundation. Plants and weeds had grown up around the destruction over the years and it was CRAZY with blackberries. I remember riding my bike over there in the summers and picking blackberries and then I brought them home and my mom made a yummy cobbler with them.

I don’t usually post recipes I’ve found on other food blogs (and actually the original recipe is from Recipe Zaar, you see my Delicious account for recipes I like from other food bloggers), but I just had to post this one because these are so awesome. Have you ever eaten a Little Debbie oatmeal cream pie? These are just like them…in fact, they are better. I used to love these when I was kid, but haven’t allowed myself to eat one in years. While these are by no means good for you, you at least know what all the ingredients are and you don’t have to worry about all the chemicals and whatever else crap is in the store bought version. I made a batch for my boyfriend to bring to his office and they were a giant hit with his coworkers who all agreed they liked them better than the originals.

I’ve already established my love for chicken pot pie in soup form. What I love about that is how simple it is to throw together. When I think about making real pot pie, well, that just seems really complicated what with the, you know, pie part. So because of that I’ve never actually attempted to make real chicken pot pie. But lately I’ve been feeling more and more adventurous about cooking. These days I usually look forward to making dinner every night, most especially when I’m making something I’ve never made before.
Last week I got it in my head that I wanted to make a real pot pie and despite being almost 8pm I decided to go for it. I’d seen a bunch of pot pie recipes around on blogs I read, but all of them seemed too complicated or took too long (I didn’t have time for dough to chill) and none of them were my definition of chicken pot pie: an actual pie. You know, with a top and a bottom to it…

Happy New Year, everyone! It’s time for my semi-annual I’m-going-to-get-in-shape-I-really-mean-it-this-time, so you’ll have to indulge me while I post some healthier recipes over the next few months. (Don’t worry, there will still be treats! I’d never give up dessert, I just find ones that aren’t as bad for you.) Honestly, I really overindulged on cheesecake and cookies last month, so I’m ready to get back to eating better and eating less processed food. I’ve been eating a piece of fruit for dessert every day this past week and it’s been perfection.
I’m always looking for easy things to have in the morning with my coffee and muffins are definitely my favorite. Unfortunately, a lot of muffin recipes are not that healthy. And of course, my favorite kinds of muffins have things like streusal on them which make them even worse for you. These muffins surprised me because they contain healthy, but not tasty, sounding things like whole wheat flour, flaxseed and oats and yet they are delicious.
