Thanks to everyone who entered last week’s giveaway! You guys really love your mac n’ cheese, which makes me think I should post my favorite recipe for it. I just rediscovered pot roast and I really like it. See what happened was, at some point in my childhood I decided I didn’t like beef. I don’t know why. There’s no rhyme or reason when you’re a kid, you just decide things like that. I wasn’t a vegetarian and it’s not like I never ate beef (I’d never turn down a hamburger), but I just refused to eat most dishes made with beef.
Slowly, I’ve been adding more beef back into my life. I like steak and I use ground beef for a lot of dishes. When I saw this recipe, it made me remember that my mom used to make Pot Roast all the time and I liked it. So why did I stop eating it? I guess maybe I thought it would be too complicated to make, but it’s really not. It’s quite easy to put together and then you just let it cook for a few hours. My mom made hers in a crockpot; I don’t have one, but it seems just as easy on the stove. I guess Pot Roast …

Unfortunately, all of those recipes either heat up the kitchen too much or they’re just too hot to eat on a muggy summer day so I haven’t made them in what feels like forever. When I was excitedly making up a new weekly meal plan full of these recipes I realized I hadn’t yet shared one of my very favorite comfort foods: Barbecue Chicken!
Back when I lived in Florida, Brandon and I had a favorite barbecue restaurant nearby that we ate at regularly but when we moved to Charlottesville the nearest good barbecue was a 45 minute drive away. That’s when I started making this recipe so that we could still get our barbecue fix. So I’m still going at a normal pace for the BBA Challenge, but I’m behind on actually posting about it. I keep going back and forth about whether I even want to post about every single bread and that leads to more procrastination. But I think ultimately, I do want written and photographic evidence that I did in fact bake every single bread in this book, in order. I may do these combo posts for bread I have less to say about, but for instance, I have LOTS to say about the Ciabatta I did this week, so that’s going to be it’s own post (hopefully next week).

I think Mexican Wedding Cookies are one of the quintessential Christmas cookies out there*. Besides decorated sugar cookies and gingerbread men, they are definitely what come to my mind when I think of holiday sweets. I’ve also seen them called Mexican Wedding Cakes or Russian Teacakes. I remember my mom would make them for Christmas parties and she’d always have to make special ones for me because I don’t like nuts.

Last month I thought about these cookies, which I haven’t had in years, and decided to whip some up. They are so easy to make and just as good as I remember. I still don’t like nuts and I think these cookies taste just fine without ’em. The recipes I looked at instructed me to make them into balls, but I always remember that my mom made hers into crescent shapes. I love graham crackers, so I’ve been wanting to make these for a long time. Graham crackers are just about the only packaged “cookie” that I buy because they’re the only ones that I don’t totally lose control around. I can eat a couple of graham crackers and be totally satisfied, unlike Oreos where I want to eat about 20 of them at a time. Graham crackers are in that perfect spot between healthy and indulgent and you can do so much with them like make smores or dress them up by slathering on something delicious. These days, I’m very partial to a graham cracker sandwich with nutella on one side and marshmallow cream on the other. So simple, so good!
But laziness has always stopped me from making graham crackers at home. It’s just easier to pick up a box at the grocery store. But when I saw this recipe in my favorite cookbook all my excuses went out the window because you can’t buy these graham crackers in the grocery store. They’re made with whole grain flours so they’re healthier and more flavorful that any store bought version. In the past, …

It seems like every week I keep saying “this is my favorite”, but hands down, these two breads are my favorite from this challenge. A couple of reasons for this:
1. Both recipes were extremely easy. No waiting a day for pre-ferments, just mix up the ingredients, knead, shape, proof, bake and boom: you have yummy bread in about 4 hours.
2. They’re just good. Period. The raisin bread tasted just like the raisin bread you buy at the store. The cinnamon rolls were just amazing. I could have eaten about a million of them. In fact, after picking out the photos for this entry (it’s been a few weeks since I actually made them), I got such a craving for them that I had to make another batch.

In a perfect world, this would be purely a baking blog where I posted one decadent dessert after the other, but since this is not a perfect world I often struggle with my desire to make these decadent desserts and the reality of trying to be a healthier (and lighter) person. It’s especially hard in a two person household where a whole cake can be entirely too much…and entirely too tempting. So I’ve found the key is to make what I want, but try to give as much away as possible. This strategy has been working out well lately and Brandon’s coworkers seem to be quite happy to eat all of our extra sweets. We also regularly attend a Saturday game night and I’ve found that to be the perfect event for trying out new cookie recipes. I get to satisfy my sweet tooth, and by the end of the night all the cookies are gone so I don’t have anything tempting me the next day.
