I’ve been looking for this recipe forever. These Quaker granola bars are just about my favorite snack and I’ve been eating them my whole life. I like them because they are soft and chewy and not hard and tooth breaking like other granola bars I’ve tried. I also like the rice cereal in them because it makes them seem more like Rice Krispy treats with granola in them rather than boring old “healthy” granola bars. Healthy food isn’t inherently fun, Rice Krispy treats are always fun.

I’m not going to lie: for most of my life I’ve hated salad. Mostly, it’s the lettuce. It’s so limp and flavorless. I’ve never had a true BLT because the lettuce was always the first thing to be discarded from any sandwich. But earlier this year I realized the problem wasn’t all lettuce it was just iceberg lettuce. So I put aside my lettuce prejudice and tried a bunch of other kinds of lettuce only to discover that they’re not that bad. Especially once you add a bunch of veggies, cheese and dressing on top.
Since making that discovery I’ve implemented a weekly Salad Night where we eat a very large salad, usually topped with chicken. It’s a simple but filling dinner on nights when I don’t feel like making much effort and it saves us from ordering pizza like we used to. It’s been especially great while we’ve been doing the Whole30 because it’s one less meal I have plan out every week.

Just like Spaghetti-os and Oatmeal Cream Pies, Pop Tarts are one of those things I loved when I was kid but have tried to stay away from as an adult. But since I had so much fun learning to make those other favorites at home, I figured it was time I finally attempted a Pop Tart. With the other recipes I was trying to make a homemade version that was close to the taste and texture of the originals. This time I wanted to make a healthier Pop Tart. But one that still, you know, tastes good. And while this recipe isn’t especially low fat (by my calculations it’s about the same as the store bought version), after some trial and error I feel like I came up with a satisfying compromise.
A Pop Tart is pretty much just pie crust with some type of filling, so the pastry dough is the most important part. I tried out several different “healthy” pie crust recipes first. I think I’m starting to look forward our Game Nights more for the baking, than for the actual, you know, playing games. Since 99% of the cooking I do is for me and my boyfriend it’s really fun to have an excuse to make something for other people. It’s also pushing me to challenge myself and try new techniques. These mallow cookies are a prime example. I’ve been wanting to make this recipe for a long time, but it always seemed like too much effort for cookies that only one other person would see. But making them for a group of people seemed much more worth it and even sounded like the process would be really fun. Plus, these cookies are seriously impressive looking. What can I say, I like to show off. Who doesn’t?

It’s still December (barely), so that means one last sweet treat until diet month! Actually, this will probably be my last post for a few weeks anyway because I’m moving to a new city and I don’t imagine I’ll have time for much posting until we get settled in our new apartment. Plus I need time to look though all my cookbooks and find new, heathly(-ish) recipes to make!
Anyway, back to today’s recipe. I had so much fun making Black and White Cheesecake that I decided to try that method with regular cake. I’m listing yellow and chocolate cake recipes that I like, (been using them for years, so I don’t even remember where I got one of them…) but really, this is all about the method. If you have a better yellow or chocolate cake recipe in your arsenal, use that instead. You can even just buy some boxed cake mixes to make things even simpler.

Eating more fresh produce has been a goal of mine since I started this blog. Before that, the few times a week when we weren’t eating at a restaurant or ordering take-out, most of the dinners I made came from boxes and the only produce I bought at the grocery store was maybe a few bananas, apples or potatoes. Heck, I can’t even say I bought potatoes all that often because Brandon still teases me about all the boxed mashed potatoes I used to prepare with pretty much every dinner back then.
I feel like I’ve come really far from those days whenever I look at my shopping cart and see that fresh fruit and vegetables take up the most space. And now I’ve finally committed to something that I’ve been interested in for years: I joined a CSA. I was always worried that we would never be able to eat enough of the produce every week and honestly, there was some extreme laziness involved when I thought about having to go and pick up the share every week. I’ll always remember my first Thanksgiving with Brandon when we were living in our first apartment together at the ripe old age of 20 and I didn’t really know how to cook anything except brownies. The turkey was the thing I most afraid of. I had always thought that cooking a turkey was so complicated and was surprised to find that it…wasn’t. I had much more problems with my stuffing which I completely ruined when instead of using a real actual onion (I think the only vegetables I cooked with back then were potatoes and tomatoes) I put in 1/2 cup (!!) of onion powder. You haven’t tasted onion until you put a 1/2 cup onion powder in something. To this day I really can’t use onion powder in anything, I think I used up my life quota of it.
But anyway, I think anyone can make a turkey. As long as you keep an eye on it and baste it regularly, there isn’t much thought or work involved. And the end product is almost always impressive looking and something that you can feel proud of cooking. …

I know oranges are available year round but for some reason the only time I actually want to eat a whole orange is in the early months of year when my two favorite varieties are available: Cara Cara and Blood Oranges. When they show up at my grocery store I start hording them so I’ll be able to eat as many as possible before they disappear again. I haven’t been to the grocery in a few weeks, so when I went on Monday and saw they finally had blood oranges I grabbed a bunch and decided it was a sign that I had to make something delicious out of them. I was so energized by the idea that I found myself in the kitchen at 11pm later that night making these scones. If I had any regrets about staying up too late I forgot them as soon as I took a bite of one the next morning.
