Have you ever had one of those terrible days that just won’t end? Yesterday started with the wonderful surprise that my beloved coffee machine wasn’t working. After much futzing around and ultimately going through the 5 stages of grief for my dead coffee machine, I plopped down in my office chair to try to get some work done. This was followed by a giant cracking noise. At first, I tried to ignore the sound, hoping it wasn’t a big deal. Then, almost comically, I leaned back in the chair and the ENTIRE back fell off along with half of an arm. Thankfully, I was able to borrow my boyfriend’s chair for the rest of the day but things didn’t really improve after that. I was waiting for the maintenance guy and the UPS guy and neither showed up. Add to that some annoying tech issues with my business and not feeling particularly inspired (or even awake) enough to finish a project and you have the recipe for very bad, no good, pretty terrible day.

I was really craving some chocolate last Friday night. My usual standby is brownies, because they are simple to whip up, but plain old brownies sounded so boring. I went and searched for brownies at one of my favorite recipe sites and as soon as I saw the name of these brownies I was already drooling.
They did not disappoint at all. Simple to make and they turned out so rich and fudgy. I’ve made a ton of brownie recipes and this is definitely one of the best. The recipe has chocolate chips in it, but I don’t think they were even necessary. They made the brownies almost too rich, so I don’t think I’ll be adding them next time.
My boyfriend is usually not a fan of brownies (which I can’t even fathom), but he loves cheesecake, so he liked these. He’s so picky about desserts (which is probably a good thing or I’d make them a lot more often), it’s great finding something he’ll actually eat!

In my attempt to eat less processed food during the day, I have been making a lot of muffins lately. They fit my criteria for easy food and as I mentioned in my last post, I love any kind of bread. The problem is they can get pretty unhealthy, so all the muffins I’ve been eating have been whole wheat, low-fat, filled with things like oats and applesauce and bananas. All of those muffins have been good, but when I was thinking about what kind of muffins I wanted to make this week, I was not in the mood for “healthy”. In fact, I had some very specific cravings: I wanted something similar to my favorite gingerbread muffins. I also knew I wanted to use the cranberries that I recently bought. And finally, I was craving chocolate because, well, it was a day of the week. (What can I say, I guess I’m a stereotypical female.)

Have you ever heard of such a thing? I mean, I know you can fry pretty much anything, but fried pasta? I’ve never heard of that before. Well, I’m here to say fried pasta = yum!
A few weeks ago my boyfriend, Brandon, and I went to Copelands and we were basically blindsided with this item. We had ordered spinach and artichoke dip as an appetizer and assumed that it would come with tortilla chips like every other restaurant we’ve ever eaten spinach and artichoke dip at (which is A LOT). But Copeland’s is not every other restaurant. The dip comes out with a plate of fried bow-tie pasta. At first we just looked at it in astonishment and even a little disgust, but neither of us are ones to turn away fried food so we tried one. Oh. My. God. I could eat them all day long. I would say pasta and fried food are my two biggest weaknesses, so to combine them is just ungodly.
The worst part is that the portion was ginormous. It was like 5 parts pasta to 1 part dip. AND WE COULDN’T STOP EATING THE PASTA EVEN WHEN WE FINISHED THE DIP. It was horrible …
