I was really craving some chocolate last Friday night. My usual standby is brownies, because they are simple to whip up, but plain old brownies sounded so boring. I went and searched for brownies at one of my favorite recipe sites and as soon as I saw the name of these brownies I was already drooling.
They did not disappoint at all. Simple to make and they turned out so rich and fudgy. I’ve made a ton of brownie recipes and this is definitely one of the best. The recipe has chocolate chips in it, but I don’t think they were even necessary. They made the brownies almost too rich, so I don’t think I’ll be adding them next time.
My boyfriend is usually not a fan of brownies (which I can’t even fathom), but he loves cheesecake, so he liked these. He’s so picky about desserts (which is probably a good thing or I’d make them a lot more often), it’s great finding something he’ll actually eat!

Okay, “Pineapple Stuff” is not the actual name of this recipe, it’s technically called Scalloped Pineapple (think scalloped potatoes, not seafood). But I, in my infinite wisdom as a child dubbed this dish Pineapple Stuff and as thus it will be known forever. I guess you can call this Pineapple Casserole as I think that’s a bit more descriptive. This is probably my favorite recipe in the whole wide world and has been since I was a kid. It was my mom’s signature dish, which she served at all the dinner parties and all the pot lucks and which everyone raved about. I’ve made it a million times at this point, but I don’t think mine has ever tasted as good as when she made it. I guess that’s just how it goes, but that certainly doesn’t stop me from making it.
This is not a dessert, it’s a side dish. My mom always served it with ham because it’s the perfect compliment. Since we had turkey for Thanksgiving, we always had ham for Christmas, so besides being my favorite dish, it also reminds …

I had a bunch of overripe bananas that I didn’t want to go to waste, so I was going to make some banana bread. That’s what you do with overripe bananas, right? But I couldn’t help thinking how boring that is. I have a great banana bread recipe from my mom, but that’s the point, everyone and their mom already has a great banana bread recipe on hand. So I made it my mission to find something different to make with overripe bananas and boy did I hit gold. This banana coffee cake recipe is AWESOME! I’ll be making this again and again. If I have kids, they will have this recipe from me, just like I have my mom’s banana bread recipe. That’s how good this stuff is.
The one fault issue nit pick, I have with the recipe is that it’s actually too good. Seriously. It’s almost too rich to eat in the morning. That could just be me, though. I’m used to eating very light in the mornings, and the amount …

As I mentioned in my last post, I have major sweet tooth. So donuts are one of my very favorite things. But since they are also one of the very worst things for you to eat, I try to stay away from them. It helps that my boyfriend HATES donuts (unless they are fresh from the oven Krispy Kreme donuts), so I never have a good enough excuse to buy them. Because of that, I probably only eat donuts a few times a year, but that doesn’t mean I don’t have cravings for them, well, all the time.
So a couple of weeks ago, when I stumbled upon this recipe for dead simple donuts I just could not pass it up. I had to see if they were any good! I bought a can of pizza dough the next time I went to grocery store and tried it out the next day. I have a raging sweet tooth and it usually reveals itself late at night. Usually I can be good and satisfy it with one of those 100 calorie packs of cookies, but sometimes only a real dessert will satisfy me. Because of that I always look for quick and simple dessert recipes to have in my arsenal that I can whip up in about an hour or two. Friday night was one such night, but I was not in the mood for any of usual chocolate recipes. I wanted something completely different. So I looked through my newest cookbook and found this recipe for glazed lemon cupcakes. They did not disappoint. Very sweet and moist and definitely a nice change of pace if your not in the mood for chocolate. Even the glaze part, which I’m usually very wary of (I’ve had some BAD experiences making icing before) was super easy to whip up. I just poured it right over the cakes, I didn’t even bother to spread it around on all of them, it pretty much did all the work itself.

You could also call this Creamy Chicken Vegetable Soup. We’ve already established how much I love Jason’s Deli. Well, this is another item they have that I love almost as much as their muffins. When I was searching around for a similar recipe, I wound up finding two. One was made from scratch and kinda high in fat, while the other was uber simple (10 minutes to make it – TOTAL) and low fat. I decided to make both and see how they compared. In end all taste-testers (which would be me and Brandon) agreed that the made from scratch version was better, but the other version was definitely still good and the fact that it was so simple and also low in fat made up for the taste discrepancies.

Jason’s Deli is one of my favorite places to eat. Brandon and I go there at least once a week just to eat their salad bar. But the real draw of this place are their mini-muffins. They are complimentary and they are DELICIOUS. In fact, they might possibly have crack in them because they are so addictive. I decided a few weeks ago that I just had to figure out how to make them at home. Four batches later, I think I’ve gotten as close as I can. It’s hard to tell since I can’t do a side-by-side taste test, but these are pretty darn close. Brandon said he thought they tasted exactly the same. I think the original muffins are a bit sweeter, but that’s probably because they have high fructose corn syrup or 8 pounds of sugar or something like that, so I’m willing to sacrifice some sweetness if it will reduce the calorie count (according to my google research the original muffins are 220 calories, which is a lot for something you can eat in one bite).
