Lemonade Layer Cake

It’s been a while since I posted a dessert here, mainly because I’ve been trying to stay away from things like that, but also because I haven’t found anything that interested me. But since it’s the first week of Spring, I decided I wanted to make a dessert that was light and fruity, nothing chocolate or heavy (which is my usual preference for desserts). So when I was flipping though my beloved Cooking Light cookbook, this recipe jumped right out at me.

Quickie: Best Bran Muffins ever?

I haven’t eaten enough bran muffins to say if these are the best ever but these muffins are pretty damn good. In fact, I thought they tasted a lot like these molasses cookies, which are a favorite of mine. Any muffin that tastes like a cookie is a win for me, so I liked these a lot.

Individual Chicken Pot Pies

I’m not sure why it’s taken me so long to post this recipe. I’ve been making it since last year . It’s one of my favorites and something I make regularly. I have another more traditional chicken pot pie recipe which I like a lot, but that recipe is most certainly not low fat so I don’t make it as much (usually only after holidays to use up the extra chicken/turkey). This recipe is a lighter version of chicken pot pie, but it tastes just as good. I got it from the Weight Watchers website and while I’ve made some modifications to it, it’s still pretty light, especially compared to other chicken pot pie recipes …

Tasty and Heart Healthy Waffles with Blackberry Syrup

I got up yesterday wanting to make a special breakfast for Brandon on Valentine’s Day, but I didn’t have to look to hard find something I wanted to make: my new favorite waffle recipe practically called out to me from the page in my cookbook and I couldn’t resist. In the past waffles were reserved only for special days because despite how yummy they are, they aren’t the most healthy breakfast in the world. Since Brandon and I are both dieting, waffles would normally be out the question. But now that I’ve found this recipe I can make waffles every weekend and we don’t have to feel guilty about eating them!

Lentil Soup (with Bacon!)

Yep, I’m still obsessed with soup and things I can make in my Dutch oven so this recipe called out to me as I was flipping though the cookbook’s pages.
Also calling out to me? Bacon! Put some bacon in anything and I’m there. There’s not a lot of bacon, though, so this is still a relatively healthy soup. And if you took out the bacon it would still be hearty and filling thanks to the lentils and the vegetables.

Quickie: Double Chocolate Peanut Butter Smores

I’m doing Project 365 this year, which is a challenge to take a picture every single day for a full year. It’s a month in and I’m already starting to run out of ideas of what to take pictures of. Last week I was sitting in my kitchen trying to come up with something, but my mind kept wandering to dessert (this is not unusual). Then I realized: I should take a picture of dessert! Perfect.
This is my favorite go-to snack.
